Prosciutto Pear Bites

2 pears
• 
3 ounces prosciutto, very thinly sliced
• 
2 Tablespoons freshly squeezed lemon juice
• 
2 Tablespoons water
• 
Freshly ground pepper
• 
Cutting board

Mixing bowl

Pairing knife or preferred knife
• 
Toothpicks

Combine lemon juice and water in a small mixing bowl (acidulated water). Peel and core (remove core) the pears and cut each into bite-sized chunks, about 40 pieces total, and place in the acidulated water. Slice the prosciutto into thin strips and fold into little square packets. Use toothpick to pierce through the prosciutto and into pear chunk. Place on a serving plate and top with a sprinkling of freshly ground black pepper.

Salty prosciutto pairs well with dry and bubbly Cava. Fresh pears add an Autumnal touch to this fast and easy appetizer. Lemon juice adds flavor but also prevents the pears from browning. Serve.
