Oven-Roasted Potatoes

• 
3 lbs red skinned potatoes, rinsed, and cut into similarly-sized chunks
• 
Salt and pepper
• 
1 Tablespoons Italian seasoning
• 
Extra virgin olive oil
• 
Chef or Santoku knife (your preference)
• 
Cutting board

Preheat oven to 425

Arrange potatoes on rimmed baking sheet

Season with salt, pepper, and Italian seasoning

Drizzle liberally with olive oil. Toss to coat.

Roast until golden and potatoes are tender, about 45 minutes.

TIP  

 
If cooking with broiled steak, start your potatoes first!
